The Industry Chews People Up. 86 Defeat Is Here for the Ones Still Standing.

PORTLAND, MAINE, USA - October 7, 2026 - PRESS RELEASE - Nobody talks about the smell of the dish pit at the end of a double. Nobody talks about what it takes to smile at a table when your feet have been screaming for six hours. Nobody talks about the cook who hasn't taken a weekend off in two months because if they do, the whole line falls apart.

The Industry Nobody Fully Sees

Hospitality is one of the largest workforces in the country. It is also one of the most physically demanding, emotionally taxing and chronically undervalued.

The margins are thin. The hours are long. The turnover is brutal. The people who stay, who build a craft, learn a kitchen and earn the trust of a floor, do it because they take pride in work most people consume without a second thought.

"This industry takes a lot. People give years of their lives to it. Their knees, their sleep schedules, their social lives. And a lot of them will tell you they'd do it again. That's not delusion. That's a kind of discipline and grit that doesn't have a name yet. We're trying to give it one," said Nio DiPietrantonio, founder of 86 Defeat.

What Gets Left Out of the Conversation

The public image of hospitality work is either romanticized or dismissed. Celebrity chef culture on one end. "Just a server" on the other. Neither is accurate.

The real work lives somewhere in between: in the pre-shift sidework, in the ticket times nobody cheers for, in the closing duties done right even when everyone's running on empty. In the line cook who knows the recipe isn't right but makes it work anyway because the window is calling. In the host who absorbs the frustration of a wait list and stays even-keeled because that is what the job needs right now.

"There's a version of this industry that gets celebrated. The awards, the reviews, the open kitchens with pretty tile. And then there's the version the people inside it actually live," DiPietrantonio said. "I built this brand for the second version. The version where you're still breaking down your station at 1 a.m. and you've got a double tomorrow."

86 Defeat does not traffic in the polished version.

Why This Matters Now

Worker recognition in the service industry is not a new conversation, but it rarely makes it past the surface.

86 Defeat is not a campaign or a hashtag. It is a brand built to live on the backs and chests of the people who do the work. Something they can wear that says, without explanation: I know what this is. I've been in it. And I'm still here.

"I wanted to make something that didn't need a caption," DiPietrantonio said. "The moment someone who works in a kitchen or on a floor sees it, they just get it. They feel something. That recognition is the whole point."
